Basics
Time and speed will depend on desired results for each of the following:
Bread Crumbs
- Up to 350g of dry or stale bread
Start with clean and thoroughly dry bowl; place cubes of bread in bowl, turn the speed switch slowly from speed 1 to 10 for 2-3 seconds, or just press the Turbo button 2-3 seconds
Bread, Basic White and Whole Wheat
- 500g of white flour 10g yeast 10g salt 350g water
Scale all ingredients into the TM bowl, stir between salt and yeast additions; mix from 0-10 for 30 seconds
Knead for 3 minutes; rest in covered bowl for one hour; shape into loaf; bake at 500°F for 12 minutes
- 500g of whole wheat 500g of white flour 20g yeast 20g salt 700g water
Scale the wheat into the TM bowl and mill from 0-10 for 30 to 40 seconds, until the desired consistency
Scale remaining ingredients into bowl, stir between salt and yeast additions; mix from 0-10 for 30 seconds
Knead for 6 min.; rest in covered bowl for 1 hr.; shape into 2 loaves and bake each at 500°F for 12 min.
Cheese, Grated
- Up to 300g cheese without rind
Place cheese in bowl and grate from speed 1 to 10
Cheese, Grated Parmesan
- Up to 250g parmesan cheese, cut in pieces
Drop on running blades at speed 8
Chocolate, Grated
- Up to 160g of chocolate baking squares
With blades running on speed 5, drop chocolate into bowl through lid; bring speed slowly up to Turbo
Chocolate, Melted
Grate chocolate as per instructions on previous page; melt the chocolate at 50°C, and temper it at 37°C
Cinnamon, Ground
Place cinnamon sticks cut to about 5 cm in length into bowl and grind for 1 minute on speed 10
Cookie Crumbs
- Up to 160g of cookies: vanilla wafers, graham crackers, chocolate cookies, etc.
Place cookies in bowl and mix for 10 seconds on speed 9
Coffee, Ground
- Up to 300g coffee beans
Place beans in bowl and mix for 1 minute on speed 8, then grind for 1 minute on Turbo
Crêpes
- 4 eggs, 250g flour, 500g milk, 60g soft butter
Place all ingredients in bowl, and mix for 20 seconds on speed 5; rest for 30 minutes before using
Crushed Ice
- 120-750 g of ice cubes
Place in bowl and Turbo pulse until crushed
Egg Whites
- 2 to 6 egg whites and ½ teaspoon cream of tartar
Start with cool, exceptionally clean and thoroughly dry bowl; attach butterfly to blades; place ingredients into bowl; mix for 2 to 4 minutes on speed 4
Frappe
- 250g ripe fruit, 6 ice cubes, 60g sugar, 500g milk
Place fruit, ice and sugar in bowl and mix for 10 seconds on speed 8; attach butterfly to blades and mix on speed 2 to 3; slowly pour milk onto lid without removing TM cup and mix for 3 to 4 minutes until well incorporated and smooth
Fruit Sherbet
- 800g sliced frozen fruit, 1 peeled and seeded lemon, 180g sugar
Remove fruit from freezer 5 minutes before using; place sugar in bowl and mill for 30 seconds on Turbo until very fine, then add lemon and frozen fruit; blend for 40 seconds on speed 7; mix for 20 seconds on speed 4; blend again for 20 seconds on Turbo; push ingredients toward blades with spatula
Fruit Ice Cream
- 100g sugar, 350g frozen fruit, 100 to 150g heavy cream
Pulverize sugar in TM bowl for 15 seconds from speed 1-10; then Turbo 3 times for 1 second each; add cubed frozen fruit and heavy cream for 20 to 25 seconds from speed 1-10 slowly, working the spatula the entire time to keep the fruit close to the running blades (A banana is a nice addition to any frozen fruit.)
Garlic, Chopped and Peeled
Finely: 1 garlic clove dropped on running blades with speed 9
Roughly: 1 garlic clove dropped on running blades with speed 7 to 8
Peeled: Fill bowl with 500g water and the bulbs of garlic you want peeled, separated into cloves; turn the dial to Reverse, and speed to 3-4 for 10 seconds; Peeled garlic will float to the top
Gratin Topping
- One piece stale bread or roll 1 clove garlic parsley, rosemary, or any desired herbs
Place all ingredients into clean dry bowl and mix for 20 seconds on speed 4
Herbs, Chopped
- 10g fresh herbs (not wet); chop 10-12 seconds on speed 6 OR
Start with clean, dry bowl and with the blades running on speed 4, drop a handful of herbs through the opening in the lid, scrape down and mince again, if needed
Legumes/Cereal
- Up to 250g of corn, lentils, oats, or tapioca, etc.
Place in bowl and blend for 2 to 3 minutes on Turbo speed
Meats, Chopped and Luncheon
Chopped: drop 120g of desired amount of lean skinless meat, diced into the bowl with blades running on speed 8 through opening in lid; turn off speed after last piece of meat; repeat procedure until all meat is used (Note: partially frozen meat can be used)
Luncheon: with blades running on speed 5, drop 150g of any kind of meat cubed into the bowl through lid opening; use to make a salad or sandwich
Nutmeg, Ground
Place 4 or more nutmegs in bowl and grind for 15-20 seconds on speed 10; scrape sides of bowl with spatula and repeat one more time until fine
Nuts, Chopped
- Up to 160g of shelled nuts
Place nuts in bowl and mix on Turbo for 10 to 30 seconds
Onion, Chopped
Finely: Up to 3 onions, peeled, cut in quarters; drop on running blades with speed 5 to 5 ½
Roughly: Up to 3 onions, peeled, cut in quarters; drop on running blades with speed 4 to 4 ½
Pasta, Cooked
- Up to 1200g water in bowl
Heat at 100°C on speed 1 until boiling, about 15 minutes; place up to 160 g of pasta in bowl; cook for 8 to 12 minutes at 100°C on soft speed/reverse blade speed 1; drain and serve
Pestos: Basil, Sundried Tomato, Walnut, Sundried Tomato Tepanade
- 100g Parmesan, 60g basil leaves, 50g pinenuts (toasted), 3 cloves garlic (peeled), 125ml olive oil
Scale all into TM bowl and blend for 10 seconds at speed 4 for a rough paste; add cracked black pepper
- 100g Parmesan, 20g basil leaves, 60g sundried tomatoes (not in oil), 50g pinenuts (toasted), 3 cloves garlic (peeled), 125ml olive oil
Scale all into TM bowl and blend for 10 seconds at speed 4 for a rough paste; add cracked black pepper
- 100g Parmesan, 1t sea salt, 30g arugula, 100g walnuts (toasted), 3 cloves garlic (peeled), 65ml olive oil, 65ml walnut oil
Scale all into TM bowl and blend for 10 seconds at speed 4 for a rough paste; add cracked black pepper
- 400g sundried tomatoes in oil (drained), 2 roasted red peppers (skins removed), 2 cloves garlic (peeled),1 tbsp. capers, 1 tbsp. anchovy paste (2-3 anchovies), 1 tbsp. basil pesto, 2 tbsp. pine nuts (toasted)
Blend all 8-10 seconds at speed 6 to make a rough paste; season to taste (more oil from tomatoes)
Sugar, Powdered, Icing or Confectioner’s
- Up to 160g granulated (regular) sugar
Place sugar in bowl and mill on speed 8 for 5 to 30 seconds, depending on desired consistency
Rice Flour
- Up to 250g rice
Place rice in bowl and grind for 2 minutes on Turbo
Rice, Cooking
- Up to 350g rice
Place rice in internal basket; add 1200g water with 1 tsp. sea salt; place the measuring cup in lid; stir 5 seconds on speed 6; cook at Varoma on speed 3 for 30 minutes; rest 5-10 minutes before serving
Vegetables, Chopped
- Up to 500g mixed fresh vegetables
Wash and cut into chunks; place vegetables in bowl and mix on speed 3 or 4
Whipped Cream
- 250-700g fresh cold whipping cream
Cool bowl in refrigerator for 10 minutes; attach butterfly to blade and pour the cream into the bowl; whip on speed 3 for 45 to 90 seconds; watch cream through lid to avoid over-mixing; DO NOT exceed speed 4
Yogurt
- 2 litres of whole milk, ¼ cup of natural plain yogurt
Cook milk in the TM bowl for 25 minutes at 80°C, speed three; cool to 37°C; add yogurt; cook again for 25 minutes at 37°C; place in the Thermo-bowl, or a thermos for five hours, or overnight; store in refrigerator
