Recipes for New Parents:
Liquid Stock (Vegetable/Fish/Chicken or Meat)
Ingredients
1. 200 ~300g Chicken bones/ Wings or Beef bones or Fish bones or heads roughly cut
2. 2 small carrots, roughly chopped
3. 1 small parsnip, roughly chopped
4. 1 small sweet potato, roughly chopped
5. 1 small onion, cut in quarters
6. 2cm piece celeriac or 2cm small stalks of celery
7. 3 bay leaves
8. 5 peppercorns
9. 3 pimento
Method
1. Place all ingredients except the water into the basket. Pour the water into TM bowl.
2. Cook for 30-40 minutes/100˚C/speed 4
3. Remove the basket with the aid of the spatula. Pour stock into a dish and refrigerate until ready to use.
4. If making vegetable stock, increase the amount of vegetables to fit into the basket.
Vegetable Stock Concentrate
Ingredients
1. 200g Celery, roughly cut
2. 2 Carrots, roughly cut
3. 1 Onion, peeled and halved
4. 1Tomato, halved
5. 1 Zucchini, roughly cut
6. 1 Bunch Parsley
7. 150g Salt *
8. 1 tsp Oil
Method
1. Place all vegetables into Tm bowl and chop for 10 sec/speed 6.
2. Add salt and oil then cook for 20 min/Varoma temperature/ speed1.
3. Mix by slowly turning the speed dial to speed 6 then pulverizing for 1min on speed 9.
4. Store in jar in refrigerator. Use tablespoon quantities instead of stock cube or stock. ie. Tablespoon concentrate to 1 stock cube.
* Tip: The salt used in this recipe is designed to preserve it. If you reduce the salt the shelf life will be reduced accordingly. This concentrate should be used to flavour soups, stews, risottos, etc.
